How to Use a Viking Outdoor Rotisserie

    • 1). Mount the rotisserie motor onto the fixed gear box on the right-hand side of the grill. Fasten the motor to the grill by hand tightening the motor screws into the attached mounting bracket beneath the gear box.

    • 2). Prepare your joint of meat for the rotisserie by securing any loose flesh that may move during the rotation of the skewer. Use butcher's string to tie around the joint to keep the flesh securely in place. Tie the legs together of poultry or game birds to minimize the movement of the leg joints during cooking.

    • 3). Slip one pronged fork onto the end of the rotisserie skewer so that prongs face towards the center of the skewer. Thread the skewer through the center of the meat to ensure uniformity during the rotisserie rotation. Center the meat along the length of the skewer.

    • 4). Slip the other pronged fork onto the skewer with the fork facing towards the meat. Slide each pronged fork into the joint of meat to prevent the meat from independently moving during the rotisserie rotation. Hand-tighten the pronged forks' wing nuts and use pliers to finish tightening.

    • 5). Remove the grill rack from the Viking barbecue and position the included basting pan into the grill base, if you need to baste your joint during cooking. Insert the tapered end of the skewer into the receptacle on the gear box and lay the other end onto the rotation wheels.

    • 6). Insert the rotisserie motor's plug into a grounded electrical outlet. Depress and turn the rotisserie gas knob to "High" and click the ignition to light the infra-red rotisserie grill. Keep the knob depressed for five seconds after the grill lights to ensure the burner does not go out.

    • 7). Choose the heat setting on the control knob that's relevant to your joint of meat. Viking recommends the medium-to-high setting for beef and whole turkey, the medium setting for whole chicken, Cornish hens, boneless pork-loin and smoked ham, and the medium-to-low setting for pork on the bone.

    • 8). Turn the rotisserie motor's switch to the "On" position and check that the skewer rotates. Close the lid on the Viking grill to ensure that the meat cooks properly. At the end of the cooking time, open the lid, switch off the motor and turn off the rotisserie burner.
