One of the most delicate meats around, beef tenderloin can be a bit tricky to cook if you aren't familiar with it.
But don't let that scare you.
It is possible to learn how to cook the best beef tenderloin your family and friends have ever tasted, if you follow these basic tips:
  • Unlike other meats, beef tenderloin must be cooked quickly in order to avoid drying it out and making it tough.
  • For best results, always cook beef tenderloin rare or medium rare - never well done.
    The longer it cooks the more flavor it loses.
  • Always let your tenderloin come to room temperature before placing it in a hot oven.
    This usually takes about half an hour.
  • To keep your end form curling and getting hard, be sure to tie your tenderloin with butcher's string prior to cooking.
  • Sear your tenderloin on each end before placing it in the oven.
    This takes about two minutes.
  • Rub the meat with olive oil, salt and pepper
  • Cook in a 400 degree oven for 30-50 minutes
  • As soon as the meat's internal temperature reaches 120 degrees, remove from the oven
  • Allow it to rest in its own juices for at least 10 minutes before cutting and serving
