      Remove the grill grate of your pit barbecue or barbecue pit. If you have a built-in barbecue pit the grill grate should be roughly an inch or so larger than the base of the pit so that it will rest securely on top during the cooking process.

    • 2). Place chunks of hard wood or eight to ten pounds of charcoal into the base of your pit barbecue. Pour lighter fluid on top of the wood or charcoal until saturated.

    • 3). Place the grill grate on top of the barbecue pit and ignite the wood or charcoal with a match. You need to wait for at least twenty minutes before adding the food you'd wish to barbecue to ensure the lighter fluid has burned away. This is important so that your food will not taste like lighter fluid. It's also important to allow the charcoal or wood to burn until the flames have burned down and both the charcoal or wood are red hot, and a whitish color. Cooking over a high flame will result in your food burning before it is even cooked all the way through.

    • 4). Arrange the food on top of the grate and cook until it's done to your liking.
