How to Make a Wicked Halloween Apple

    • 1). Wash and dry three or four un-bruised apples. Remove the stems, being careful to get the entire stem, and insert a stick into the stem end of each apple. The apples will be easier to dip and coat with caramel if they are taken out of the refrigerator and washed and dried about 15 minutes before dipping.

    • 2). Put a flat aluminum pan on the countertop to place the apples on after they are dipped. Melt the caramel either in the top of a double boiler or by microwaving in a microwave-safe bowl for 2 to 3 minutes. Check and stir after each minute for a smooth caramel consistency suitable for dipping the apples. You may need to use a knife, spoon or spatula to spread and even out the caramel. When melting the caramel, remove it from the microwave or the heat as soon as it begins to bubble and stir it. I like to use a double boiler method because if your caramel begins to thicken, you can put it back over the hot water in the bottom of the double boiler and thin it out again quickly. Different brands of caramel melt to a thinner consistency than others, which makes some easier for dipping than others. If you're making more than a few apples, you may want to try different brands to find the one you like the best. Be very careful when working with hot caramel; it can give you a nasty burn.

    • 3). Dip each apple in the caramel, allowing the excess caramel to drip back into the pan so you don't waste it in the process. Put 4 circles of chocolate chips in the pan with space between them. Stand each apple in the prepared pan on a circle of chocolate chips and put the pan in the refrigerator while you prepare the chocolate. Don't worry if the caramel settles and creates a wide, gooey bottom--it's supposed to be this way!

    • 4). Wash and dry the double boiler pan or microwave bowl to use for melting the chocolate.

    • 5). Pour the remainder of one bag of milk chocolate chips into the pan or bowl and melt it. Check and stir minute by minute until it is melted to the right consistency for drizzling onto the apples with a spoon. This takes 2 to 3 minutes, stirring after each minute.

    • 6). Take the apples out of the refrigerator and, using a spoon, drizzle chocolate over the carmel-covered apples. Again, don't be too concerned if some of the chocolate pools at the bottom. Put the apples back into the refrigerator until they are completely cool.

Carefully remove each apple from the pan and wrap it in plastic wrap. Tie the plastic with Halloween print or colors of ribbon. You may want to size and print copies of the tags below and punch a hole in each tag and attach it with ribbon as well. Or you can create tags of your own with your own verse.

    • 8). Refrigerate until ready to serve or distribute..
