Homemade Pork Cheeks Recipe Ingredients 4 pork cheeks 1 onion 1 oz of cured ham 2 or 3 ripe tomatoes 7 oz of carrots 3 artichokes 1 oz of burnt almonds 1 yolk Parsley Salt and pepper to taste 1 bay leaf 1 cup of broth A little of red wine (if desired, to taste) To start, take the pork cheeks and give them a quick seasoning with salt and pepper to taste.
Mince the onion, chop the tomatoes and chop the ham into bite-sized pieces and keep them ready to add in, as you heat the oil in a pan and then add the pork to brown it off.
Then take out the pork, and add the minced onion, tomatoes and bits of ham.
Sprinkle in a bit more salt.
Let it all boil down, then add the wine (if you want), and let them evaporate as well.
Now, mince the garlic, and mix with the burnt almonds and minced parsley, then dissolve into a small amount of broth and add to the saucepan as well.
Add the pork cheeks to the saucepan once again with a bay leaf and the rest of your broth.
Cover it and cook in the oven for 30 minutes.
While the cheeks cook up, cut the carrots lengthwise, and boil them with a tablespoon of sugar until nice and tender.
Then add them to the saucepan too.
Cut the artichokes and clean them from the uglier leaves, then boil with water and some salt.
Once these are boiled, bread them, and fry them in a pan of hot oil.
When there's 5 minutes left for the pork cheeks, add the artichokes to the saucepan to finish it all up.
Now, you're ready to serve up! There's a lot of different things you can serve this up with, from rice to potatoes.
If you can sneak in some bread to soak up the gravy, all the better!
