    Create Fish Shape

    • 1). Cut a large oval shape for the fish body from the rectangular sheet cake, tapering the body more drastically on the tail end than on the head end. You should be left with four corner pieces that look like triangles, but with one side curved.

    • 2). Place the flat edges of the corner pieces from the back end of the fish together to make a large tail fin that is mostly triangular in shape, but with two concave sides. Cut off the tip of the triangle where the concave sides meet so the resulting edge is about 2 inches wide.

    • 3). Arrange the pieces of cake on a serving platter in the shape of a fish. The corner pieces from the front end of the fish act as the pelvic and dorsal fins. The shape created in the previous step is the tail fin, and the 2-inch edge is the site where the fin lies against the end of the fish body.

    • 4). Spread icing on the edges where the fins and tail meet the body and press them against the fish, using the icing as glue to hold the fish together.

    • 5). Spread a thin crumb coat of frosting over the entire fish and refrigerate the fish for 30 minutes to let the frosting seal.

    Decorate Fish Cake

    • 1). Spoon 2 tablespoons of frosting into a plastic bag and mix food coloring in to make a dark color for drawing the eye and mouth on the completed fish.

    • 2). Color the remaining icing with whatever color you would like to use for the body of your fish. Spread the icing over the top and sides of the fish cake using the spatula.

    • 3). Arrange candy wafers on the cake so they overlap each other to make fish scales. Start at the back end of the fish body so the visible end of each scale is toward the fish's tail. Arrange the candy wafers by color to make a pattern or randomly to make a rainbow fish. Do not put candy wafers on the tail or fins.

    • 4). Cut off the tip of the plastic bag with the dark colored frosting in it and pipe the frosting out to create an eye and mouth at the front of the fish cake.
