    Types

    • While some vegetables need to ripen in hot summer weather, others, including leafy greens and members of the cabbage family, require cooler soil. Cool-season plants thrive in the fall in garden plots with good drainage. Raised garden beds provide excellent drainage, but any soil can be amended with compost.

    Time Frame

    • In early July, plant beets, cabbage, carrots and cauliflower. Put in radishes, peas, spinach, kale and lettuce later in the month. Diseases can be reduced by not planting crops where related vegetable had been growing, according to Oregon State University. For example, plant cauliflower in a spot vacated by cucumbers, not Brussels sprouts.

    Considerations

    • If you plant in the heat of July, water frequently. Newly germinated seedlings may need a sprinkling twice a day. On scorching afternoons, use boards or umbrellas to shade young plants.
