Have you ever had to watch others enjoy decadent cute treats while you eat something plain and not very fun in an effort to keep your blood sugar levels in control? As a mom, I have had to make some really tempting treats for my son and his friends. It's really hard to keep from serving some up for myself as well. Here is a recipe for a fun diabetes-friendly ice cream treat that makes me feel like I'm indulging and eating something fun.

The key to this treat is using ingredients that are low in carbohydrates and sugar and cutting down on the ice cream portion size. I use just enough ice cream in the cone to make me feel like I'm not missing out on the traditional ice cream cone taste and experience.

I use regular ice cream cones that have 4 g of carb with no sugar and canned pressurized whipped cream that has 0.7 g carb and 0.5 g of sugar per 2 tablespoon serving. I also use vanilla ice cream that has about 17 g carb and 15 g sugar per half cup. However, I only used an eighth of a cup of ice cream which works out to about 4 g of carb and 4 g of sugar. Although I have suggested this amount in the recipe, I personally don't even use that much. I also use an eighth cup of fresh blueberries which works out to about 2.5 g of carb and 2 g of sugar.

In total, this treat has 13.3 g carb and 8 g sugar. However, because of the fat content which is just over 7 g of fat, make this an occasional splurge for special occasions. The fat content can be greatly reduced if you use no fat or light whipped cream and ice cream.

Ingredients

  • 1/2 cup pressurized whipped cream
  • 1/8 cup vanilla ice cream
  • 1/8 cup blueberries
  • Optional:You can add slivered almonds to the whipped cream and also mix in a pinch or more of cinnamon into the ice cream.

Preparation

Put the ice cream into the ice cream cone. Top with whipped cream and press the blueberries into the whipped cream toping. Enjoy.

Other Ideas

  • You can use other berries like strawberries instead of the blueberries.
  • Forgo the berries and instead use a small amount of almonds, coconut, and pieces of dark chocolate that don't have a lot of added sugar.
