How to Roast a Chicken Without a Roasting Pan
- 1). Preheat the oven to 450 degrees Fahrenheit. Remove the giblets and any excess fat from the chicken cavity and discard. Rinse the chicken and pat dry with paper towels.
- 2). Season the inside of the cavity with kosher salt and freshly ground black pepper. Add 2 cloves of garlic and 1 bunch of thyme to the cavity.
- 3). Tuck the wings under the chicken, cross its legs and secure them with kitchen twine. Coat a cast iron skillet with 1 tbsp. olive oil and place over high heat for 5 minutes.
- 4). Apply a layer of olive oil to the chicken and season to taste with kosher salt and black pepper. Place the chicken in the preheated cast iron pan and place it in the oven.
- 5). Roast the chicken for 15 minutes, reduce the heat to 350 degrees Fahrenheit and continue cooking until it has a minimum internal temperature of 165 degrees Fahrenheit in the breast and thigh. Remove the twine, thyme and garlic prior to serving.
