It is certainly no secret that kids can be picky eaters, which often makes finding recipes for mealtimes rather difficult.
Mexican cuisine is one choice to consider as it contains so many different ingredients including a number of delicious cheeses.
Empanadas are a great Mexican style food that the kids will be sure to love as they can be filled with so many delicious foods.
Empanadas are an easy to make treat that can be made in different sizes but can also be bought premade in packages if you do not have the time to spend preparing the dough.
Perfect Pizza Empanadas Recipe What You Need for the Dough
  • 1/2 tablespoon cold water
  • 1 whole egg
  • 1 egg white
  • 1 teaspoon vinegar
  • 3-1/4 cups flour
  • 1 teaspoon salt
  • 3 tablespoons shortening
What You Need for the Filling
  • 1 large can (at least 15 ounces) pizza sauce
  • 1 cup mozzarella cheese, shredded
  • 1 cup provolone cheese, shredded
  • 2 cups pepperoni, sliced or diced
  • 1 cup mushrooms, chopped, optional
  • 1 cup green peppers, chopped, optional
  • 1 cup black olives, chopped, optional
  • 2-3 tablespoons vegetable oil
How to Make It In a medium sized bowl combine the water, egg and egg white, and vinegar and beat together using an electric mixer.
Set the mixture aside.
In a large mixing bowl, combine 3 cups of flour and salt.
Using a pastry blender, or two butter knives if you do not have one of those, cut the shortening into the flour.
Make a "hole" in the center of the flour mixture and pour in the egg mixture.
Mix both sets of ingredients together with a fork until stiff.
Put the dough on a moderately floured, flat surface such as the kitchen counter and begin to knead.
Knead just until the flour from the counter has been incorporated into the dough.
The ball of dough should be mostly smooth.
Securely wrap the dough in plastic wrap and refrigerate for at least one hour but no more than 24.
After refrigeration, add more flour to the countertop and roll the dough out using a rolling pin until it is about 1/8 of an inch thick.
Using biscuit cutters or round cookie cutters cut the dough into circles.
The type of cutters you use should depend on the size of the empanadas you want.
For smaller empanadas, also known as empanaditas, use cutters that are about 3 inches in size.
For larger empanadas, use 6 inch cutters.
Add a spoonful of pizza sauce to the center of each circle of dough.
Be careful not to put sauce too close to the outer edges of the circles.
Sprinkle even amounts of cheese onto the sauce and add the pepperoni or the fillings of your choice to each empanada.
Do not overfill the empanadas or they will break apart while frying.
Fold each empanada in half and then crimp the edges around the half circle with a fork.
Dipping the fork in water or a beaten egg will help to seal the dough.
Over medium to high heat, fry the prepared empanadas for no more than 2 minutes per side.
The dough should turn a light golden brown color.
Serves up to 12 depending on the size of the empanadas.
