    • 1). The cutlery use and care guide at the Chicago Cutlery website recommends you sharpen knives after a couple of uses. Use sharpening steel on a flat surface. Draw the knife at a 15 degree angle to the steel. Draw an arc across the steel with the knife blade, pulling the knife toward you from the base of the knife to the tip. Turn over the steel and repeat the process with the same side of the blade. Sharpen the other side of the blade following the same steps as with the first side. Do this three to five times, alternating sides of the blade. Clean metal particles from the sharpening steel using scouring powder. Rinse and thoroughly dry the steel after each use.

    • 2). Hand-wash Chicago Cutlery knives with a cotton cloth. Wet the cloth in warm, soapy water. Dry with a lint-free dry cloth immediately after cleaning. Wipe the knife handle with the soapy cloth.

    • 3). Protect your knives when you store them. Store them in a knife block to prevent nicking. Place the knives in the block with the blade facing upward to maintain the edge, unless you use a block with a sharpener inside the block. Hang knives from a magnetic strip for an alternative storage method.
