There is no doubt when viewing old TV westerns that at some point in time you've seen an old pot or skillet cooking over an open flame.
The idea of obtaining tough long lasting cookware has much appeal to today's modern cooks and chefs.
Seasoning Cast iron cookware has many unique qualities such as durability, easy to care for, can cook anything in it, and will practically last forever.
If you ask most people who cook with cast iron they will swear the food taste better as well.
Unlike other cookware these will actually get better with age if properly cared for.
The more they are used the better seasoned they are.
Seasoning is a process where the microscopic pores are filled in causing the surface to become smooth.
The color actually darkens with every use until it reaches a patina with a slight shine.
This is the mark of well seasoned cast iron.
Longevity Cast iron is durable, so durable that it is the same material used in car engine blocks, they withstand heat and they are extremely strong.
The iron is melted then poured into pan shaped molds known as casts.
Iron will not scratch, chip, or melt, well actually won't melt unless you're cooking over 2500 degrees of course.
Additionally the handles won't fall off and there is no non-stick material used in the production, so no worries about fumes that may be present such as other non-stick style pans.
There are only two things that are potentially harmful to the iron and they are; running the cookware through the dishwasher and putting cold water directly on a hot pan.
Advise and Tips
  • Buy a pre-seasoned pan when possible, the cost is slightly higher but will eliminate this very important process that will help secure its longevity.
  • Cooking with cast iron is more economical.
    It has the ability to absorb and retain heat, therefore reducing your overall fuel cost.
  • Huge selections.
    Cast iron comes in just about every shape used in the cooking world such as skillets, frying pans, pots, griddles, serving pots, Dutch ovens, pizza pans etc...
  • A single pan can be used for baking, roasting, frying, and many other uses.
  • With cast iron, you can take the pan directly off the cook top and directly to the table.
  • Well seasoned iron is virtually stick-free so you are not using much oil in the cooking process

So grab the whisk and those long forgotten forks and metal spatula and start poking and scraping away worry free.
