How to Slice a Fresh Ham
- 1). Place a bone-in ham on a cutting board. Use a sharp knife to make a horizontal cut above the center bone of the ham. Continue cutting through the meat, removing the top portion from the bone.
- 2). Flip the ham over, placing the flat side down on the cutting board. Make two vertical cuts as close as possible to the bone, removing the meat from either side.
- 3). Place the bone on its side, and make the last cut to free the bone from the meat.
- 1). Place the largest portion of the ham with the cut side facing down.
- 2). Hold the ham piece firmly in one hand or with a fork, and begin cutting thin slices off of the meat. Move the slices to a serving platter or storage container to create space as you work.
- 3). Continue cutting the meat. Cut the remaining portions of the meat, in thin or thick slices according to your taste. Wrap uncut portions of ham in foil and seal in a plastic bag and store in the refrigerator until you are ready to use them.
