Serve Up a Scrumptious $13.00 "Stimulus Supper" Compliments of the Recovery Bill
President Obama has signed into law the $787 billion Stimulus Bill, a unprecedented piece of legislation designed to repair our struggling economy.
Among the many programs funded in the bill there are provisions for the average worker earning less than $75,000 per year to receive an extra $13.
00 per week in the their paycheck.
Now $13.
00 per week does not sound like that much money when compared to the billions allocated for Infrastructure, Health Care and Protecting the Vulnerable but, it is $13.
00 more than we had before.
The question is what to do with the extra money and how to save even more in your paycheck each week.
Start by making a low cost family meal that is super-tasty, and will leave your family with plenty of leftover cash.
Here is a great fabulous "Stimulus Supper" that will save you some serious cash at the grocery store and provide you a very healthy dinner.
"TO DIE FOR" HEALTHY FRIED CHICKEN Olive oil cooking spray 1 Cup buttermilk 2 Tablespoons Dijon mustard 2 Teaspoons minced garlic 1/2 Teaspoon hot sauce 2 1/2 Pounds chicken drumsticks, skin removed 1/2 Cup flour 1 1/2 Teaspoon paprika 1 Teaspoon thyme 1 Teaspoon baking powder 1/8 Teaspoon salt 1/8 teaspoon pepper Whisk buttermilk, mustard, garlic and hot sauce in a small bowl until well blended.
Add chicken to a large reseable bag.
Add buttermilk mixture and turn to coat.
Marinate in the refrigerator for at least 1/2 hour or for up to 8 hours.
Preheat oven to 425 degrees.
Spray a cooking sheet with olive oil spray.
Stir flour, paprika, thyme, baking powder, salt and pepper in a small bowl.
Mix well to blend.
Place the flour mixture in a paper bag or large sealable plastic bag.
Shaking off excess marinade, place one or two pieces of chicken at a time in the bag and shake to coat.
Shake off excess flour and place chicken on the sprayed cooking sheet.
Spray chicken pieces with cooking spray and bake until golden brown and no longer pink in the center, about 40 minutes.
HEALTHY CAJUN POTATOES 2 1/2 pounds small white new potatoes 1/4 cup olive oil 2 shallots, chopped 1 teaspoon minced garlic 1 teaspoon salt 1/2 teaspoon paprika 1/2 teaspoon cajun seasoning 1/2 teaspoon pepper Cut each potato in at least 3 pieces, lengthwise.
In a medium bowl, combine the oil, shallots, garlic, salt, pepper, paprika, and cajun seasoning; add potatoes and toss to coat.
Place in greased roasting pan.
Bake, uncovered, at 450 degrees for 45-50 minutes or until tender and golden brown, turning every 15 minutes.
This healthy low cost dinner should be served with green beans.
