Recipe for Cherry Coconut Bar Appetizers What You Need
  • 1 cup flour
  • 1/2 cup butter or margarine
  • 3 Tablespoons powdered sugar
  • 2 slightly beaten eggs
  • 1 cup sugar
  • 1/4 cup flour
  • 3/4 cup chopped walnuts or pecans
  • 1/2 cup drained cut maraschino cherries
  • 1/2 cup flaked coconut
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla flavoring
How to Make It Prepare a 9 inch square baking pan by lightly coating it with cooking spray and then set aside until needed.
Preheat your oven to 350 degrees Fahrenheit.
Using a pastry blender or two knives to combine and cut in the flour, butter or margarine and sugar until the mixture has a texture of coarse crumbs.
Press this mixture into the prepared baking pan evenly while forming a rim along the sides.
Place in preheated oven to bake for about 15 to 18 minutes and then remove from heat.
Prepare the filling by adding the slightly beaten eggs, sugar, flour, chopped nuts, maraschino cherries, coconut, baking powder, salt and vanilla flavoring medium to large size mixing bowl and combining until well blended together.
Spread this mixture over the hot crust and then return to oven to bake for about 25 more minutes.
Remove from oven to cool before cutting into 1 inch bite size squares.
You can serve these sweet appetizers immediately or you can store them in an airtight container in the refrigerator to chill until you are ready to serve them.
If you are short on time, you can always choose to substitute canned cherry pie filling instead of making your own homemade filling.
You can also adapt this recipe by substituting various other types of pie filling, whether you make it yourself or use canned pie filling.
