Sugarless Jam Recipe
- There are several sweeteners that can replace sugar in a jam recipe. You can use honey or fruit juice. However, honey is just as calorie ridden as sugar, and the change is of no benefit to the diabetic. Fruit juice often contains added sugar. And the ones that don't do not add much sweetness to the jam. Splenda is probably the best sugar substitute, for making jam, that does away with the sugar and is useful for lowering calorie intake and for diabetic diets.
- Clean and slice 4 cups of fruit, such as strawberries, raspberries, peaches and plums. Put the fruit in your blender and blend until it is a crushed consistency. Add 1 1/2 cups of Splenda and 1/4 oz. of non-sugar freezer pectin (found at the grocery store). There is no need to add this sugar substitute in the same amounts as you would sugar in a regular jam recipe, as it will make the jam taste bitter. Stir the fruit and Splenda mixture for a few minutes, until the Splenda and pectin are dissolved. Pour the jam into containers and freeze or refrigerate.
- Clean, slice and blend 1 cup of fruit, as in the above recipe. Place the fruit in a pot, along with 3/4 cup of sugar-free soda (strawberry, lemon-lime, orange), Bring the mixture to a boil on a medium heat and continue cooking for a minute. Take the pot off of the heat and stir in a small package of sugar-free Jello and 3 tbsp. of Splenda. Stir until the Jello and Splenda are dissolved. Pour the jam into containers and freeze or refrigerate.
