How to Prepare Homemade Oatmeal Cookies
- 1). Cream sugars, margarine and shortening in a large bowl. Stir in vanilla and add eggs one at a time, beating after each egg.
- 2). Stir together flour, salt and baking soda in a separate bowl. Add to cream mixture and mix together.
- 3). Add oatmeal and coconut. Mix everything with your hands.
- 4). Drop by heaping teaspoons about 2 inches apart on a cookie sheet greased with cooking spray. Bake 12 at a time at 350 degrees F for 10 to 15 minutes, until golden. They will not need to be very brown.
- 5). Transfer quickly onto a cooling rack using a metal spatula. Repeat Steps 4 and 5 until all cookies are baked.
- 1). Place flour in a heavy saucepan over medium heat. Add a little milk to make a paste.
- 2). Add the rest of the milk and stir. Cook until mixture thickens. You may have to lift the pan from the burner a few times to keep the mixture from scorching. Stir frequently while it cooks.
- 3). Remove mixture and let cool.
- 4). Cream shortening, margarine, sugar, salt and vanilla until fluffy in a small bowl. Blend cream mixture with flour mixture well with an electric mixer.
- 5). Spread cream on top of one cookie. Top with another cookie.
