HOW TO SELECT When purchasing garlic, always buy fresh garlic.
This allows for maximum flavor and nutritional benefits.
Garlic is also available in flake, powder or paste form and although it may be more convenient, it's best not to choose these forms because you will get less health benefits.
Buy garlic that is plump and that has unbroken skin.
Squeeze the bulbs gently and check to see that it feels firm and not damp.
HOW TO STORE When storing garlic, keep it in either an uncovered or loosely covered container and store it in a cool dark place so that it's not exposed to heat or sunlight.

Some people like to refrigerate or freeze peeled garlic.
