How to Freeze Fresh Lasagna Noodles
- 1). Place wax paper on a cookie sheet. Arrange the fresh lasagna noodles in a single layer on the sheet. Keep the noodles separated--do not allow the edges to touch.
- 2). Cover the fresh noodles with a single layer of plastic wrap. Press the wrap tightly around the edges of the pan to seal it.
- 3). Place the cookie sheet in the freezer. Use the quick-freeze shelf, if there is one in your freezer. Leave the noodles in the freezer for four hours, or two hours on a quick-freeze shelf.
- 4). Remove the lasagna noodles from the freezer and lift the plastic wrap off the top of the cookie sheet. Stack the frozen noodles in a single pile, all lying in one direction.
- 5). Wrap the stack of lasagna noodles in plastic wrap, using two to three layers of the wrap. Slip the wrapped noodles into a zip-top freezer bag and close, pressing excess air out of the bag as you zip it closed. Write the date on the bag with a permanent marker pen.
