How to Make Savory Cheese Puffs

Cheese puffs are a savory appetizer. They are a simple treat that has a more complex chemistry than some may think. Even so, it doesn't take a rocket scientist to make them.

Duct tape may hold the world together, but in the world of cooking, protein is what binds. In most cheese puff recipes, the foundation is made of either flour or bread. Because this is a pastry, eggs and butter are also required. Depending on the recipe, baking soda could also be used, and usually is, when the base is bread, (a baguette or white bread) instead of flour.

Cheddar is the cheese most often used for cheese puffs. Often sharp cheddar is used, as is mustard, and to add more of a tang, Worcestershire sauce is also sometimes used. Why cheddar you may ask? Cheddar, although it has several varieties where its sharpness ranges from mild to biting, often has a somewhat earthy taste, near to hazelnut.

Cheese puffs, although a pastry are quite savory, and the complex taste of cheddar gives the puffs a rich, savory flavor without a lot of ingredients. However, their very simplicity makes them infinitely customizable because you can add one or two ingredients to a basic batch of cheese puffs.

Cheese puffs are an excellent appetizer, and a simple recipe is offered below.

The following recipe is for three dozen cheese puffs.

Start by preheating your oven to 400 degrees Fahrenheit.

The ingredients are as follows:

• Start with 1 and 3/4 cups of sharp cheddar cheese.
• 3/4 cup of all-purpose flour.
• Soften 1/4 cup and 2 tablespoons of butter. Margarine is an acceptable substitute here.
• 3/4 teaspoon of ground mustard.

Combine all of your ingredients into a bowl. Mix them well.

Using a small spoon to get the shape going, roll the mixture into 1-inch balls.

Once you have all the balls formed, place them on an un-greased baking sheet with at least 1-inch distance between them.

Bake them at 400 degrees for 12-15 minutes or until lightly browned.
If you want to mix up the ingredients, try adding onion or garlic powder 1/2 teaspoon for this recipe. You may also want to try some Worcestershire sauce, or even a few drops of hot sauce for an extra kick.
