Start by setting up an area in your kitchen for your spices and to prepare your spice blend. Wash your hands and gather all of your ingredients together. This is called your mise en place or everything in its place. This is how chefs keep themselves organized and helps them transition to the next task. This step can help keep you from running around the kitchen while you are cooking. - 2
Combine the ground cinnamon, ground pepper, crushed aniseed, crushed fennel seeds and ground cloves in a small bowl. Mix them up well until they form a uniform shade of brown. - 3
Once combined into a blend you can then store the spice blend in an airtight container in a cool dry place for more then 6 months. This is a great blend to add to chicken salad, use as a rub on a roasting chicken or add to french toast batter.
