This Mexican cheeseburger casserole reminds me of a tater tot casserole, but with French fries on top instead of tater tots and with a Mexican flavor profile. The kids will really enjoy this recipe, and you will like the fact that it is easy to make.

I like to use sweet potato fries for this recipe, but feel free to use regular French fries if you prefer. If you aren't using seasoned fries, you'll want to season the ground beef with salt and pepper. Otherwise, this casserole will be too bland.
