The cook them and serve them if it's not in the union contract it can happen so the whole contract was renegotiated and it actually stated that they would prepare and serve Whole Foods because before that really only needed to use can openers box openers and just use food that was coming to them from the government program which isn't all bad by it really doesn't look quite the same as you know when you put it on the train that fresh salad being prepared so that was a pretty significant undertaking as well as increasing the Pro-tease budget by like tens of thousands of dollars lot of money went into it and connecting with local agriculture say the biggest thing we did is we purchased equipment so
they didn't have any way to prepare Whole Foods so they had box openers and as I said before and can openers but they didn't have knives and industrial size food processors and mixers and things that you need really large industrial size actually provide to the children and that's the result changes in our government policy to the US-TA and Department that in the seventies when they actually stopped funding that and that's when cafeterias went to just serve or open sir and so now the movement as you know is to bring Whole Foods back but it requires outfitting entire kitchen so this was just an experiment where we tried to actually make that happen and teaching people how to use knives when people are hired for food service positions they're not necessarily skilled
in knife on use in safety so that was a lot of the training so and not actually serve those fruits and vegetables for children which is a dietary guidelines you need to step pretty far back in the system to make that happen and that's a lot of the work that we did some pulling out a couple examples to talk in more detail about that were incredibly time-consuming required a lot engagement and trust-building and thesis what the la cart look like before and this is the la cart after that should be every other card in schools across America now almost years later and then we have this restaurant initiative that now with menu labeling happening I'm hopefully most restaurants will look like this now but we wanted TestoStorm to make sure people knew what they were getting in that they had a good option so we work to the restaurants to become shape up approved they had smaller portion sizes fruits and vegetables low-fat dairy anon we really worked on their concerns about the barriers to overcome serving these things and we work very closely with them and this became its own manuscript as well to a lot of people are referring to as.
