This recipe for Slovenian ham loaf or mleto sunka is a perfect way to use up leftover ham. Pair it with Bulgarian Potatoes Au Gratin and a green salad or vegetable, and you have a great meal.

Here's a larger photo of ham loaf. This is great hot or cold. Remember to leave some of the ham fat in otherwise it will be too dry.

Ham Hock and Greens Soup Recipe

Ingredients
  • 1 cup milk
  • 1/2 cup sour cream
  • 2 large beaten eggs
  • 1 pound dry white bread, cubed
  • 1 1/2 pounds ground leftover ham (leaving some of the fat in)
  • 1 medium finely chopped onion
  • 2 finely chopped garlic cloves
  • 1 tablespoon chopped fresh parsley
  • Pepper
  • Bacon strips (optional)

  • Prep Time: 30 minutes
  • Cook Time: 60 minutes


  • Total Time: 90 minutes


Preparation
  1. In a large bowl, combine milk, sour cream and eggs. Add bread cubes and mix well. Set aside to soften.

  2. In a separate large bowl, combine ground ham, onion, garlic, parsley and pepper to taste. Add bread mixture and combine thoroughly. If it seems too wet, add some dry bread crumbs. If it seems to dry, add a little milk.

  3. Heat oven to 350 degrees. Either coat a 9x5-inch loaf pan with cooking spray, or line it with bacon strips. Pat ham mixture into the loaf pan. Bake uncovered 1 hour or until well browned. Remove from oven, cover loosely with foil and let rest 10 minutes. Unmold and portion into thick slices.
