Recipe for onion soup au gratin with sliced onions, bread, and cheese.

Ingredients
  • 2cupssliced onions
  • 2tablespoons vegetable oil
  • 1 tablespoon butter
  • 5cupsbrown soup stock (any kind)
  • 1tablespooncornstarch
  • 6thick slices toasted French bread
  • 3/4cup grated cheese


Preparation

Cook onions in oil and butter until soft and caramelized. Add cornstarch, stirring well, stock, salt, and pepper. Bring to a boil, place square of toast in each individual soup dish, ladle out the boiling soup and sprinkle thickly with grated cheese.
Serves 6 to 8.
