Main Meal Ideas

While heating up the grill, stir together 1 tbsp. sesame seeds, 2 tsp. fresh grated ginger, 2 tbsp. honey and 2 tbsp. reduced-sodium soy sauce. Grill four boneless, skinless chicken breast halves over hot coals for 4 minutes on each side or until done and baste frequently with glaze mixture while cooking. Line a large baking sheet with heavy-duty aluminum foil. Arrange 1 1/2 lbs. cod, haddock or halibut fillets on the foil and salt and pepper to taste. Layer the following ingredients over all of the fish in the following order: one sliced onion, 1/3 cup minced fresh parsley and 2 tsp. each of grated lemon and orange peel. Drizzle 4 tsp. canola oil over the fish and top with a second sheet of foil. Align both sheets of foil and fold and crimp edges to seal in fish. Preheat oven to 350 degrees for 10 minutes, then cook fish for 15 to 20 minutes taking care not to overcook. Fish will flake with a fork when done. Open foil carefully to avoid scalding by the steam. - Stir together 1 lb. chopped plain pork barbecue, 1 cup of barbecue sauce, ½ cup of chopped fresh cilantro and two minced green onions. Lay one 6-inch tortilla in a hot, lightly-greased nonstick skillet and sprinkle tortilla with ¼ cup of shredded Mexican four-cheese blend. Spoon 1/3 cup of pork barbecue mixture on half of the tortilla. Allow tortilla to cook for 2 to 3 minutes or until cheese melts, then fold tortilla in half over the filling. Transfer finished quesadilla to a serving plate and repeat with seven more tortillas.

For a quick and easy main dish, preheat oven to 400 degrees, sprinkle one 5-lb. bone-in prime rib roast with salt and pepper to taste. Lay roast, flat side down into a roasting pan. Fill pan with water halfway and bake for 1 1/2 to 1 3/4 hours. When cooked, prime rib roast will be crispy on the outside and rare on the inside. Bake individually foil-wrapped bake potatoes drizzled with olive oil and salt inside foil. Roast and potatoes should be done about the same time.
