This slow cooker black bean soup is simply flavored with garlic, salt pork and ham hocks, onion, and a variety of seasonings.

Bacon could also be used in this soup instead of the salt pork.

Beefy Chili Bean Soup

Ingredients
  • 1 bag (1 pound) black beans, soak overnight and drain
  • 2 cans chicken broth
  • 2 onions, chopped
  • 2 oz. salt pork, diced, or use bacon
  • 1 teaspoon sweet paprika
  • 2 teaspoons red wine vinegar
  • 1 green pepper, chopped
  • 2 ham hocks
  • 3 cloves garlic, crushed
  • 1 teaspoon ground  cumin
  • 1/4 teaspoon chili powder


Preparation

Put beans in stockpot or Dutch oven and cover with water; simmer beans until just tender. Drain. Put all ingredients in a slow cooker and cook on low for 9 to 11.

Serves 6.
