How to Smoke a Country-Style Ham
- 1). Unwrap the country-style ham and put it in a large bowl of water in the refrigerator. Leave it there for four hours and then drain. This removes excess salt from the meat.
- 2). Put your chosen smoking wood into the metal pan provided with your smoker per the manufacturer's instructions. Soak it in the chosen liquid for 20 minutes. Drain.
- 3). Place the wood-filled pan on the heating element of the smoker. Plug in the unit. Oil the cooking grill and put it in place. Cover the smoker and watch the temperature gauge. You want the heat at 225 degrees. Once smoke rolls from the chamber, put the country-style ham in place and close the lid again.
- 4). Smoke the ham, adding more wood as needed, for the next four hours. Turn the ham using your tongs once an hour. In the last hour you can brush on a spice rub or glaze if you wish.
- 5). Put the meat thermometer into the middle of the meat at the end of four hours. If it reads 160 degrees, remove the ham from the smoker, using pot holders and transferring it to a cutting board. Let it rest for 15 minutes before slicing.
