How to Open Kettle Can Tomatoes
- 1). Cook your tomatoes as desired and keep them warm on the stove.
- 2). Insert a cooking rack into the bottom of a large pot that contains a lid and fill the pot with water about 4 inches high.
- 3). Place the glass jars upright into the pot, place the lid on the pot and allow the water to boil.
- 4). Fill a small saucepan with water and allow it to come to a boil.
- 5). Place the lids and rings into the boiling water and reduce the temperature to simmer.
- 6). Remove a glass jar from the boiling pot, using tongs, and place it onto a cutting board.
- 7). Insert a funnel into the jar's opening.
- 8). Scoop the tomatoes into the funnel, using a ladle, and then fill the jar to about 1/2 inch from the top.
- 9). Remove the funnel and wipe the rim of the jar with a lint-free cloth to remove any spills.
- 10
Remove a lid from the pan, using tongs, and place it on top of the jar. - 11
Remove a ring from the pan, using tongs, and place the ring on top of the lid. Tighten the ring into place. - 12
Repeat Steps 6 through 11 until you have filled all of the desired jars. - 13
Place your filled jars back into the large pot, onto the rack, and then fill it pot until the water is about 1 inch from the lid of the jars. If you have a canner you can use that instead of the large pot. - 14
Bring the water to a boil for about 85 minutes to ensure the food items have reached a temperature that is hot enough to preserve your tomatoes. - 15
Remove the jars, using tongs, and allow the jars to cool on a cutting board for about 12 hours before you label them and remove the ring. As the jar cools, the lid will form a tighter seal. You do not have to remove the ring if you do not prefer to.
