Question: How to Make Tah Dig in a Rice
I would like to make tah-dig in my rice cooker but I have heard that I need a special rice cooker to do so. Is this true?
Answer: Yes, special rice cookers do exist that are great for making tah-dig, but they are very hard to find. They are mostly sold and manufactured in Iran and unless you live there, you are somewhat out of luck. Some Persian stores in the U.S.
may sell them, but they really can be hard to find. So, we are left to use what we have on hand!
To make tah-dig in a regular rice cooker, first add a layer of cooking oil to the bottom of the non-stick insert. You want to add just enough to liberally coat the bottom. Follow your manufacturer's instructions on how much rice and how much water to add. Add in any spices you want, like turmeric and turn on the rice cooker. It's as easy as that!
Let me tell you that this probably will not have the same crusted, burnt consistency as tah-dig made on the stovetop or in a Persian rice cooker, but it comes close.
