How to Make Grilled Stuffed Sole
- 1). Heat the 2 tbsp. extra-virgin olive oil and 3 tbsp. unsalted butter in a large skillet until hot. Add the 1 yellow onion, very finely diced and 2 cloves chopped garlic and cook for 3 to 5 minutes, or until translucent.
- 2). Mix 1/2 cup sun-dried tomatoes in olive oil, 2 tbsp. thyme, 2 oz. panko breadcrumbs and 2 tbsp. lemon juice in a small mixing bowl. Add salt and pepper to taste. Add the stuffing mixture to the skillet.
- 3). Using a sharp knife, cut a tab in the skin at the top of four whole, cleaned sole, just behind the eye. Spoon the stuffing mixture into the hole, smoothing the mixture into the fish with your fingers.
- 4). Cook the fish under a broiler for 8 minutes on each side or until golden brown.
- 5). Transfer the fish to individual plates and garnish with lemon slices and thyme.
