How to Half a Game Hen
- 1). Wash the thawed game hen thoroughly under clear running water and pat it dry with paper towels.
- 2). Place the chicken breast-side down on a cutting board. Start at the bottom of the hen to remove the backbone by cutting along both sides with a pair of kitchen shears. Set it aside.
- 3). Lay the chicken skin side down on the cutting board and remove the cartilage running down the center-bone.
- 4). Lift up on the rib cage and use the tip of a sharp knife to slice under the bones. Remove the rib cage on both sides and set aside.
- 5). Remove the wishbone by slicing under it with the tip of a sharp knife.
- 6). Season and cook the game hen as desired. While still hot and immediately before serving, cut the chicken in half by sliding the tip of a sharp knife along both sides of the center bone located between the breasts.
