Test your kombucha for the first time after you've mixed up your homemade brew and are ready to let it ferment. To test, insert a straw or clean spoon into the kombucha and remove a sample. If using a straw, do not use your mouth. Instead, place a finger over the straw and upend it to take a sample.

    • 2). Place the pH strip onto a plate or other surface and drip the kombucha sample over it. Alternatively, if you've taken a larger sample you can pour it into a glass, and insert the pH strip into the tea. Wait about 30 seconds (check the test strip manufacturer's specific guidelines).

    • 3). Observe the color of the testing strip. Compare it to the color chart included with the pH strips to determine the pH of your kombucha sample. At this stage in the brewing process, before fermentation, the pH should be 4.6 or below.

Test the tea again to ensure it has reached the desired acidity. Repeat steps 1 through 3, then look for a pH between 3.8 and 2.8. Don't let the tea get too acidic.
