Prepare two cake mixes separately according to the manufacturer's directions. Add 1 tsp. baking powder to each mixture to help the cake rise higher. Spray pans with nonstick cooking spray. Bake one mix in a 10-inch round pan and one in a 6-inch round pan. After the cakes are done, let them cool in the oven for 10 to 15 minutes so they do not fall. - 2). Line a large cookie sheet with wax paper. Allow plenty of work space, so if you don't feel comfortable with the room on your cookie sheet, you may want to move the wax paper to open counter space or a table.
- 3). Empty two cans of frosting into a large bowl. You may use any color or flavor. If you want a custom color, mix buttercream and food coloring until you get the desired shade.
- 4). Remove the cakes from the pans, and place them on the wax paper. Dust off any crumbs that linger on the cakes so the frosting will go on smoothly. Spread some frosting on the top of the large cake, and stack the small cake on top of it to form the castle's base.
- 5). Spread the remaining frosting around the entire cake with the palette knife until it is covered completely. Apply small amounts at a time. Start from the bottom, and work your way up to the top of the cake. Make the frosting appear smooth and flawless by going over it lightly a few times with the knife.
- 6). Position four dessert cake rolls vertically at equal intervals around the base of the large cake. Do the same on the small cake. Stand another cake roll vertically on top of the cake, inserting a wooden skewer through the center of the roll and through the center of the cake until it is no longer visible. You can use any cake rolls of your choice. These represent the towers.
- 7). Spread frosting around the mouths of nine ice cream cones, and then dip or roll the frosting in sprinkles. Balance the ice cream cones mouth down on top of the dessert rolls (towers) to form spires.
- 8). Cut five chocolate sticks in half, and then cut four of the halves at an angle, two at a slight angle and two at a dramatic angle. Arrange the sticks along the base of the castle to create a door.
- 9). Place chocolate squares randomly on the castle to create windows.
- 10
Press jelly candies all the way around the bases of the two cakes. A variety of different candies works for this step, so be creative or incorporate the cake recipient's favorite treats. - 11
Cut a flag shape out of construction paper. It should only be about 2 to 3 inches in width and height. Glue the flag to a toothpick, and allow it to dry. Insert the toothpick through the center of the top tower. - 12
Put the finishing touches on your cake by rearranging any candy to your liking and smoothing any frosting that looks bumpy.
