Calphalon is a cookware company belonging to the Newell Rubbermaid Company. Calphalon is primarily known for its lines of pots and pans. You can buy Calphalon pots and pans with bare metal surfaces, with nonstick coatings or with porcelain enamel. - The Tri-Ply lines are have stainless steel cooking surfaces, to which food can stick. The Tri-Ply Copper cookware is copper lined with stainless, and the copper will inevitably discolor with use. You shouldn't put the copper utensils into a dishwasher but that's not a problem for the Tri-Ply Stainless Steel cookware.
These lines come with glass lids, which many cooks dislike because they may break. - These pots and pans weigh a lot, but that's more a mark of quality than a disadvantage. This line also comes with glass lids, which may break. The non-stick coating cannot go under a broiler, but it can handle oven temperatures up to 500 degrees Fahrenheit.
The Unison line replaces the discontinued Caphalon One line, which a few years ago had a reputation for non-stick coatings that would wear out. That's no longer a problem. - Pure stainless-steel implements look great, can handle any heat and can go in the dishwasher. The problem with stainless-steel cookware is that food can stick to it. That's not a problem specific to Calphalon, but to all stainless-steel pots and pans.
Calphalon Contemporary Stainless is the company's higher-quality product, with an aluminum core. The lighter pans of the Simply Calphalon Stainless and the Kitchen Essentials lines won't heat as evenly.
These come with glass lids, too. - Calphalon sells Simply Calphalon Nonstick, Contemporary Nonstick, CS Nonstick and Kitchen Essentials lines of no-stick cookware. The lesser grade of non-stick coating on these pots and pans means you can't wash them in the dishwasher. They also suffer that most common drawback of Calphalon cookware: glass lids.
