There is a superbly flavored curry originated from Malaysia that is milder, and yet full with amazing flavor of a myriad of herbs and spices that you expected from an exotic oriental dish. This traditional cuisine is called kapitan chicken.
The name Kapitan chicken has been known since the colony time in the 15th centuries. Based on the folklore, there was a Chinese cook who worked for a British captain was curious to learn more about Malay cooking. He knew that there was another Malay woman who can cook very well in the same ship. He asked the lady if she is able to reveal her recipe. The lady told him that it is a chicken curry dish and show him the method of cooking.
Upon returning to his own kitchen, he realized that it was too hot for the British captain and the crew.He improvised the recipe by considerably decreased the quantity of chili and included several Chinese ingredients. After he has perfected the dish, he wanted to show off his new creation to his captain during one of the banquet. To his delight, the majority of the visitors as well as the captain are enjoying the bursting myriad of flavors of this unusual dish. The guests were all inquiring the captain what is the name of this delicacies. The chef wished to satisfy the captain so he quickly stated that it was captain's chicken. Consequently, the name captain's chicken or Kapitan chicken in the local terminology has since been used to terms this authentic local cuisine.
Kapitan chicken is different from the typical Malaysian curry not just it is less hot, but is also cooked with different group of spices. The main herbs and spices used are turmeric, lemongrass, onions, garlic and ginger. It is different from the Malay and Indian curry as not merely it is cooked with less chili, but is also the mix of spices used.A number of the less frequently used spices among the Chinese such as fenugreek, cumin and fennel are left out from the recipe. Rather, belacan is included a tiny amount with abundance of coconut milk.
