Beef Pot Pie
Ingredients
- 2 Tbsp. olive oil or canola oil
- 3 carrots, peeled and diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 12 oz. jar beef gravy
- 1/2 cup sour cream
- 2 Tbsp. corn starch
- 3/4 lb. deli roast beef, chopped into bite-sized pieces
- 1 sheet puff pastry, thawed 40 minutes to room temperature
- 1 egg
- 1 Tbsp water
- Prep Time: 20 minutes
- Cook Time: 45 minutes
- Total Time: 65 minutes
Preparation
- Preheat oven to 375 degrees F. Spray an 1-1/2 quart baking dish or 9-inch pie pan with cooking spray.
- Heat oil in a medium skillet over medium heat. Add carrots, onion and garlic.
- Cook, stirring occasionally, until vegetables soften, about 5 minutes.
- Place beef gravy, sour cream and corn starch in a large bowl. With a wire whisk, beat until smooth (make sure there are no lumps of cornstarch).
- Fold in vegetables and roast beef pieces. Pour into prepared pan.
- Roll puff pastry to an 11-inch square. Unfold puff pastry sheet over the mixture, trimming, tucking and pinching the pastry around the edges to fit the dish. Beat egg and water. Brush over pastry. Cut a few slits in the pastry to allow steam to escape.
- Bake 20 minutes. Check to make sure edges of pastry aren't browning too quickly. If they are, cover with strips of foil. Bake another 25 minutes or until pastry is golden brown.
