    Roasting Waltham Butternut Squash

    • 1). Preheat the oven to 400 degrees.

    • 2). Scrub away dirt and debris from the squash under cool running water with a vegetable scrubber.

    • 3). Peel the squash with a knife or vegetable peeler.

    • 4). Cut away the stem and slice the squash in half vertically. Scrape away the fibers and seeds with a spoon.

    • 5). Place the squash halves onto a baking sheet and brush them with butter. Season to taste with cinnamon, sugar and other desired seasonings.

    • 6). Set the baking sheet into the oven and bake the squash for 40 to 45 minutes.

    Mashed Waltham Butternut Squash

    • 1). Scrub away dirt and debris from the squash under cool running water with a vegetable scrubber.

    • 2). Slice the squash in half vertically and scrape away the fibers and seeds with a spoon.

    • 3). Place the squash halves onto a microwave-safe plate.

    • 4). Heat the squash in the microwave for two minutes at a time until soft.

    • 5). Allow the squash to cool enough to handle and scoop away the soft flesh from the skin with a spoon. Place the squash into a bowl and mash with a fork until it is smooth.

    • 6). Add butter to the mashed squash to taste as well as other desired seasonings such as cinnamon, nutmeg and sugar.
