How to Get a Key Lime Pie to Set Right and Not Flatten
- 1). Preheat your oven to 325 F. Beat the egg yolks and the can of condensed milk in a mixing bowl until fully mixed. Add the lime juice slowly, whisking constantly.
- 2). Pour the mixture into your pie crust. Put the pie in an oven for 10 to 15 minutes. This helps firm the mixture.
- 3). Remove the pie from the oven and put it in the refrigerator. Allow it to sit for at least two hours. Whisk together 1 cup sour cream and 2 tbsp. powdered sugar. Spread the mixture evenly over the top of the pie with a spatula to help set the lime filling. Refrigerate for at least another hour. Serve straight out of the fridge, still cool.
