Tiganopita Me Feta (Τηγανόπιτα Με φ&eps
I always like writing about a meze (Greek appetizer). To me, it really is the base of the cuisine. They are such an important part of Greek food, and more importantly, Greek life. There is nothing like sitting down with a few different plates of small bites, ouzo or a beer, and some family or friends. You can just sit for hours sampling food, talking, drinking, being merry.
I actually think every Greek has fond memories of these days. Especially when you were young, seeing all the adults huddled around the table, in debate, laughter, and love.
When you are out in Greece, you will be able to indulge in all the various and wonderful mezethes (µe??de?), some are the more popular ones like dolmathes, fish, and fried vegetables.
However, you may come across one you have never experienced before. One that you will think about making when you get home. One that surprises you.
For me, that was this dish: Tiganopita Me Feta (???a??p?ta ?e feta) - Feta Cheese Pancake
When you read the work pancake, you will immediately think of breakfast, and while you could have this in the morning, this is actually a midday snack that resembles a pancake. It is extremely versatile. Without honey I will have it for breakfast. With honey, midday and even a late evening snack.
Basically, you can eat this at any time of day. It is not too hard. The only time you have to worry about is letting it sit a bit before baking. This step can not be skipped, as you will need the flour to absorb some of the liquid.
Once that is done, you just pour the batter onto a baking sheet, and pop it in the oven. 25 minutes later, you are either drizzling it with honey or slicing it up to eat.
Ingredients
- ¾ cup flour
- 2 eggs
- 1 cup water
- 1 teaspoon honey
- 1 teaspoon olive oil
- 2 tablespoons butter, melted
- 4 ounces feta, crumbled, plus extra for topping
- Pepper
- Honey for serving (optional)
- Prep Time: 30 minutes
- Cook Time: 25 minutes
- Total Time: 55 minutes
- Yield: 4-6
Preparation
- Beat the eggs in a mixing bowl and add in the water, honey, and olive oil, mix well.
- Once that is mixed, while stirring, slowly add in the flour, melted butter, and some pepper, mixing well.
- Cover and let sit for 20 minutes*
- Preheat oven to 400F.
- After batter has thickened a bit, add in all but a small handful of feta into the batter, mix well.
- Pour batter onto a baking sheet lined with parchment paper.
- Sprinkle top with remaining feta.
- Bake for 25-30 minutes, or until golden brown.
- Remove, and cut into small squares .
- Serve plain or with honey.
NOTES
*During this time, the flour will absorb more of the liquid. You want it to become a lose pancake batter. Do not skip this step and do not add extra flour, as it will alter the taste.
