Sweet Puff Pastry Twists Recipe - Baguettes Feuilletees au Sucre
If you use store bought puff pastry dough (pâte feuilletée), these flaky, melt-in-your-mouth pastries are incredibly quick and easy to make. All you need is the prepared dough, granulated sugar and an egg white. Shaved chocolate is optional. For extra rich buttery flavor, make your own puff pastry to portion out and have ready to use in the freezer.
How long to make the twists is up to you, so the final yield will depend on the dimension of the dough when rolled out. Serve the pastries for breakfast, tea time, snack time or as an accompaniment to ice cream or other desserts.

Ingredients
- 250 g (8 oz.) pate feuilletee, chilled
- 60 g (1/3 cup) granulated sugar (preferable course-textured)
- 1 sachet of vanilla flavored sugar
- 1 egg white, lightly beaten
- 50 g (2 oz.) dark semi-sweet chocolate, grated or shaved

- Yield: 10 to 20 pastries
Preparation
Preheat your oven to 350° F (180° C). Line a large baking pan with parchment paper.
Combine the granulated sugar and vanilla in a small bowl. Scatter a little sugar on your work surface and roll out the puff pastry to 1/8" thick rectangle. Use a pastry brush to coat the surface of the dough with egg white, then generously sprinkle with the sugar. If using the chocolate, distribute it over the sugar.
Use a long sharp knife, a pastry wheel or a pizza cutter to slice the dough across the short side into narrow strips about the width of a finger. Loosely twist the strips of dough and place on the lined baking sheet. Allow room between each pastry for expansion.
Bake for about 15 minutes or until crispy, flaky and golden. Cool on a rack and serve.
The puff pastry twists are best eaten the same day. They may be stored in the freezer; reheat directly from the freezer in a 350° F (180° C) for a few minutes to return to a just-baked state.
