Mango Salsa, Three Ways
I have several recipes on this website for dishes that are garnished with some kind of mango salsa, such as steak and quinoa salad, coconut fish with mango salsa, and Uncle Chris' Crazy Quinoa.
But mango salsa has infinite uses - it makes a good dip for chips, or as a stand alone salad, or as a garnish for all kinds of grilled meats - and deserves a page of its own.I have gathered together three variations on mango salsa, but they are just starting points.Adjust as necessary to suit your taste - salsa is a very personal thing.I've found that firmer, slightly less ripe mangos work best in salsa - they have a more tart flavor that suits savory foods, and they hold up better to being chopped and tossed around.
