The Cake, Flowers, Grass and Bunny Behind

 This is an absolutely charming cake that will not take too much time. You will need:
  • A three or four layer cake
  • A bunny behind
  • Fondant flowers
  • Fondant grasses
  • Chocolate or brown icing for the stump and in a piping bag topped with a star tip
  • Green icing in a piping bag topped with a grass top


Cut out the Stump Hollow

Take a knife and cut out the area you want to put the hollow in the stump for your Easter bunny hole. The size will depend on how big your bunny rump will be when finished. Then take a spoon and hollow out the hole about 1 1/2 inches deep. This works best if your cake is chilled and the icing set between the layers. 

Frost the Stump

Take a spatula or palette knife and frost the entire outside of the cake including the hollow. This does not have to be smooth at all because you are going to be roughing up the  outside of the cake to represent bark. 

Texture the Bark

 While the icing is still soft, take a fork and create the bark texture all over the cake. Make sure you make the circle pattern on the top of the stump to mimic the rings found on real tree stumps. The outside of the stump should be long lines and knobs. You can either use chocolate icing or brown tinted icing on the cake. 

Make the Roots

 Take the piping bag filled with chocolate or brown icing and pipe roots at several intervals all around the tree stump. There should be a root on either side of the hollow part of the tree stump. Create texture on the roots by going over them a couple times for thickness and rough design. 

Add the Long Grasses and Stems

 These grasses and stems will be made ahead by tinting your fondant a nice bright spring green and then rolling it about 1/8-inch thick and about 4 inches square. Pick the flat piece of green fondant and use scissors to cut out thin strips of fondant in the shapes you want for the grasses. These should be different thickness and lengths. 

Take the grasses and press them onto the sides of the cake next the roots.

Press them wherever you want in groups of three or four. 

Pipe on Grass

 Take the piping bag filled with green icing and pipe grass in between the longer fondant grass. The best look is if the icing is a different color green than the stems. You can pipe a little or a lot of glass depending on your preference. 

 Press the pre-made fondant flowers onto the tops of the fondant stems. These flowers can be very simple fondant rolled roses, press out flowers and even piped flowers if you want that look. 

 Place the bunny bottom in the hollow of the tree.
