How to Make Small Donuts
- 1). Pour the three cups of flour, one cup of sugar, two teaspoons of baking powder and 1/2 teaspoon of salt into a large bowl and mix well.
- 2). Crack two eggs into another bowl and beat them well with a fork until fluffy. Melt one tablespoon of butter in a microwave safe container in the microwave for a minute. Pour into the bowl with the eggs. Add four tablespoons of milk.
- 3). Measure one tablespoon of vanilla extract and 1/8 teaspoon ground nutmeg. Pour into the egg, butter and milk mixture. Mix vigorously.
- 4). Make a small cavity in the center of the dry ingredients. Pour the butter, milk and egg mixture into the cavity. Mix with wooden spoon in one direction until it becomes a ball and all of the flour is mixed in.
- 5). Stick a fork in the middle of the center of the ball. Roll the ball around the inside of the bowl to collect the remaining bits of flour stuck to the bowl.
- 6). Dust some flour on your work surface. Put the ball of flour onto your work surface, and flatten it down until it's 1/2 inch thick.
- 7). Place a glass that's 2 and 3 inches wide upside down on the disk of dough and turn it back and forth to cut out your donut shapes. Set them aside.
- 8). Stick your finger in the middle of each donut to make a center hole. The center hole should be at least 1 and 1/2 inches wide because as the donut fries, the hole will close up somewhat.
- 9). Pour peanut oil into a pot so that it is deep enough for the donuts to float in, approximately 3 cups. Heat it to 360 degrees. Check the temperature with a cooking thermometer.

Place two to three donuts into the hot oil. Don't drop them in! You don't want to splash hot oil on yourself. Turn them over with a fork in the hot oil until each side browns and cracks slightly. - 11
Remove them from the hot oil with a fork and let them drain on a plate covered with paper towels. Shake confectioners sugar on them. Serve warm but not hot.
