Pauline's owns two gardens that grow heirloom lettuce, kale and arugula. The gardens also grow most of the herbs that are used in the pizza including orange bergamot and rosemary. Of course, the most prolific item in the gardens is the tomatoes; Pauline's grows more than 300 tomato plants of over a dozen varieties.
