How to Put Grill Marks on a Steak Cooked on a Flattop

    • 1). Turn the heat setting on your flat top grill to high and scrape the surface clean with a grill brush or brick. A clean grill will better transfer the heat to your steak and steak press for better marks and browning.

    • 2). Place your steak press on the hottest part of the flattop grill's surface and allow it to heat up while you liberally season your steak with coarse salt and freshly ground black pepper. The seasonings will dry out the surface of the steak to make marking the meat easier and develop a crust that will hold in moisture.

    • 3). Place your seasoned steak on the flattop grill to begin cooking one side. Lift the hot steak press from the flattop's surface and use a basting brush to apply a thin coat of vegetable oil to the raised ridges of the press. Set the oiled press onto the steak and push lightly to mark the surface with a series of parallel lines.

    • 4). For a diamond pattern, remove the steak press and set it back on the hottest part of the grill. After a couple minutes and another coat of vegetable oil, twist the press 45 degrees and press it lightly onto the steak to make lines perpendicular to the first set.

    • 5). Use a spatula or tongs to flip the steak onto the side you have already seared with the press and allow it to finish cooking. When the steak has reach your desire cooking level remove it from the flattop and serve it with the seared side up.
