To make the dough, blend two and a half cups of all-purpose flour and half a teaspoon of salt with two teaspoons of sugar in a food processor. Gradually add sixteen teaspoons of cold unsalted butter and pulse till small crumbs form. While blending, add two or three teaspoons of ice cold water and keep blending till large crumbs form in the dough mixture. Remove the mixture from the food processor and knead the dough with your hands. Add some more water if needed or sprinkle a little flour on it if it is too sticky. Divide the dough into two equal parts and shape each into five-inch disks. Refrigerate the dough for an hour after wrapping in plastic wrap.

To roll out the pastry, place one half of the dough between sheets of waxed paper and sprinkle a bit of flour on it. Use a rolling pin to roll out into a twelve-inch round. Spread it out on a pie dish and trim the edges. Freezing the dough before baking firms up the butter and prevents the dough from shrinking. Make the filling by mixing four pounds of peeled, cored and sliced apples with one and a half cups of cranberries along with a quarter cup of chopped crystallized ginger, three-fourth cup of sugar and three teaspoons of flour. Season with a pinch of salt and a teaspoon of lime juice. Pour into the pie shell and roll out the other half of the dough. After freezing for a while, use a lattice cutter to cut out a lattice top and cover the pie shell by tucking the sides into the pan.

Sprinkle some sugar on the pie and bake in a preheated oven till the crust is golden. The filling also starts to bubble when it is cooked. This pie usually takes an hour to cook. You can cover the edges of the pie with an aluminum foil if they turn too dark and the center isn't cooked yet. Let the pie cool on a wire rack and serve by cutting into wedges. You can also add a dollop of ice cream or whipped cream on each slice before serving.
