How to Clean Rabbit Meat
- 1). Put on your rubber gloves. Make a shallow cut from the anal opening through the rib cage and up to the neck. Take care not to puncture the intestines, as this can contaminate the meat.
- 2). Pull out the entrails. Look at the rabbit's liver. If it has white spots, it is diseased and needs to be thrown away. If it is good, place it in a plastic bag along with the heart to cook later.
- 3). Use your thumb and index finger to pinch the hide up and away from the center of the rabbit's spine. Use your knife to slit the hide from the spine down the sides. Take care to make shallow cuts so you do not damage the meat.
- 4). Grab hold of the hide with both hands. Pull in opposite directions. Keep pulling until the legs are skinned down to the feet.
- 5). Cut off the feet, tail and head. Clean the body cavity my removing any leftover material once you are done dressing the rabbit.
- 6). Rinse the rabbit under running water. Pat the rabbit dry with paper towels. Package the rabbit in a large plastic bag. Store the meat in the refrigerator or freezer.
